Offset affects concavity?

Offset affects concavity?
So here's my questions..what truely affects the concavity of a wheels? I'm buying wheels in 4 to 5 weeks and i'm questioning about how concave these wheels will be. Here are the specs for the Forgestar F14 on a V36 sedan...
front 19x8.5 +35
rear 19x10 +40
Forgestar Wheels Custom Rotary Forged Flow Formed Concave Performance Wheels
Tire sizes are pending, but they will be stretched so i do not mind running stretched tires. I asked one guy and he told me that the lower the offset the more concave it will be, but the Forgestar rep told me the wider the wheel the more concave it will be.
To break it down...

Can anyone reccomend me good specs for the wheel?

Yeah since forgestars don't come with a lip, offset controls concavitiy
I'd go with 20-25 offset for the fronts though

Width, offset, and spoke design all effect how concave a wheels can be. Wider and lower offsets, in general, will lead to a more concave wheel on wheels that are designed to be concave....
The offsets all depend on what you plan to run for tires sizes and alignment settings. A safe offset with a mild drop is 19x8.5 in the mid to upper 20's, and 19x10 around 40. If you plan to stretch tires or run more negative camber, you can go a lot lower. On the 19x8.5 you can easily go in the teens, and on the 19x10 you can go low 30's with stretched tires and over 2 degrees of negative camber.

You had that much poke front and back?
Honestly if you want to stay conservative go with something in the mid 30's. I would push it a little though and go low 20's
EDIT: Keep in mind this all is dependent on how much you drop the car as you will tuck more once you go lower
