I believe Sam already alluded to the fact that you shouldn't even go there. Don't downgrade the back rims to an 8.5, that's a front rim size, you should be looking at 8.5 in the front and 10 in the rear. If these wheels don't come staggard look for something else, there are tons of options out there. Take your time and you'll find the right one for you.

It's a tough question to answer because most of us who have aftermarket wheels have a staggered set up and typically go with a lower profile tire vs rhe stock OEM tires ... Running the same width all the way around is more common on awd cars like the Evo. Is there any particular reason you don't want a larger width in the rear?
On the contrary, I want a larger width on the rear. The alloys in question simply don't come in "staggered form". They are only available 8.5inch on both front and back. Hence the dilemma.
Can the 8.5" be adjusted somehow to fit the current setup (i.e. 9.5" on the back) or will I have to buy smaller tyres to accomodate?
I'm currently running stock everything.
The car comes with:
19x8.5 Sport Rims Stock (Front)
19x9.5 Sport Rims Stock (Back)
Tyres are Bridgestone Potenze RE050 225 front, 245 rear

I think the 8.5 will fit on the rear since it fits on the front. Would you by any chance be able to swap one of your front wheels with the rear to see if it rotates? If it does your good to go. I understand your limited option with the wheels you desire. Nothing wrong with that, I'd just test fit myself first. But if your asking if it can be done and run the OEM tires, yes I believe it will be fine if your test fit works.

I'd rather go to a fabricator and have them replicate the design and stick to what's on the car already.

What would prevent 8.5" wheels from fitting at the back? Is it the offsets thing?

Ahhh..sorry, didn't realize you wanted to keep the exising tires. you should PM Neal from Tire Rack and see if he can help you, he's on this forum and will give you some definitive advice.

pretty sure the 8.5 rims will fit, i think he's concerned about the rear tire on the 8.5 rim size. If you're running a 255 rear tire, I am just not sure how that fits an 8.5 rim, it may, just can't say with any level of confidence.

Limiting your rear wheel width to 8.5 just so you can make use of your current tires isn't the smartest thing to do, not everyday do you buy wheels so get your setup right from the start.
You can save your current rear tires and use them as fronts in the future.

Ok so basically this is what I've gathered from this thread so far:
If I want to keep everything else stock (tyres, offsets, bolts whatever)and simply swap out alloys I need to get:
* 19x 8.5" Front
* 19x 9.5" Back (If I can't find alloys that come staggered, then I need to have them replicated or pick a different type which do come staggered)
* I need to look for alloys which have a bolt setup of 5x114
* I need to go for wheels that have any offset between < >

Ok the short answer is yes. A 245-40-19 tire (tyre since that's the word you used in the op, my guess you're one of the few Brits with a G37 congrats!) will fit perfectly on a 8.5" rim.
What I would do in your case is to just go with 245-40-19 all around. But I highly recommend to simply shop around and find a set of decent staggered rims.
