Yeah, those are definitely some hott wheels. Big thumbs up from me!
As far as the tire sizes, I would probably do a 245/40 and a 265/35 on that set-up. To be honest, if I had to do my own set-up over again, that is likely what I'd do. Since your wheels are 1" smaller in width, I would say that set-up would be almost perfect.
A +22 offset is moderately aggressive for our cars. So, my only concern, with a subtle drop like Eibach, is that instead of sitting flush with a little camber, the car won't be low enough to run a lot of negative camber so your tires would sit more square and poke a little. You know what I mean? Obviously, I don't know because I haven't seen it yet. However, considering the less aggressive widths you'll be running, I actually think you may be able to pull it off nicely.
I'm looking forward to seeing this...

UPDATE:
So after thinking about Bill's concerns with the eibach springs I decided to make a change in the setup. Decided to switch to coilovers, so I purchased a set of BC Racing BR Type coilovers this morning
I have the eibach springs for sale in classified section, they are BRAND NEW never used:

Oh boy... I hope you didn't base the decision to upgrade on my concerns alone. Like I said, I think with the less aggressive wheel widths, you may have been okay with that Eibach set-up. Regardless, you will be happy upgrading from springs to coilovers. I think you made a good decision. Now you have the ability to adjust/customize your suspension to your liking.
