Help Rear tire size for my volks

just to give you some numbers...
245/40/19 (stock rears): 26.7" overall height, 9.6" wide
275/30/20: 26.5" height, 10.8" wide
285/30/20: 26.7" height, 11.2" wide
295/30/20: 27.0" height, 11.6" wide
so 285s will be less than 1/2" wider that your 275s which means you only have about 5mm extra tire towards your fender. so as long as you have more clearance than that you should be fine.
mike id go with 295/30 because 295/25 will be too short since you want to stay within 3% of your stock overall height.

I have GT30's with 285/30 with Eibach drop and rub frequently on medium or greater bumps. Basically ever time I take the car out I rub. Waiting on my intake to do dyno's and get my fenders rolled and fender bolt grinded while at Forge.
The difference between an Eibach and Tanabe drop in the rear is .1 which suggests it's highly likely you'll rub without the mods above.

As everyone has mentioned, I'm running the 285/30-20s on my GT30s dropped on H-Techs. Absolutely love the fitment. I personally wouldn't run anything bigger. I'm to the point that even with my bumper bracket mod and shaving of the linings, if I tried to straighten up my wheels to improve the camber, I'd rub severely. Rear camber for me is at about -2.5 I think.
Go with the 285s. It'll be aggressive and accomplish your goal but not over aggressive and risk messing up your wheels or fenders by rubbing.

thanks Lyndon!@!! i love you man!!! lol...much better idea...but i gotta make sure the 30 series will be clearing for my offset as im not 100% on my offset...so 195-25 will do if the 295 30 dont..but im def shooting for the 30's!!! i like some more preotection 4 sure...thanks i very much appreciate ur advice dood!!
