So do aftermarket rims for an older model G35 sedan fit better than those for the old G35 Coupes? Looks like the offsets are more similar.

I don't know much about G35 rims but remember that rim width plays into it. 25mm offset on a 8.5" rim should stick out about the same as a 37mm on a 9.5" (as far as the math goes).

it will fit but is going to stick out. unless you are dropped a lot then it wont but then you will be rubbing without modification

Yeah, if you don't drop it, it probably won't look good, and if you do drop it, it will almost definitly rub.

Why oh why did Nissan have to change the offsets on the 08 cars from the previous gen...

I agree, jedmonds. My GT-Cs weren't even an aggressive offset for my G35, yet the rears stuck out when I tried to put them on my 37. Here's how they looked on my old car:

245/35/19 front

Well, I did a test-fit of my Volks on the G37. Doesn't stick too far out in the back, IMO. The fronts fit easily. If I lowered it and went with a 255 or 265 tire instead of the current 275, it would probably fit fine. Here are some pics:
