Coolant temperature dropped?

Hey guys

So tonight I noticed that my coolant temperature dropped when my foot got heavy when I was at a stop sign. The car went to about 5k RPM and then the temperature needle went from the center of the gauge to a little over the 1/4 mark...and then rebounded back to normal.

Is this normal? I'm afraid to recreate the situation in fear that something may be wrong with my engine. The coolant temperature was normal before I hit the throttle...and my car has been on for roughly 5 minutes before this. Hopefully I'm just overreacting and that the engine hasn't reached normal operating temperatures yet?
