driving technique

Sorry if this is discussed elsewhere but I couldn't find a thread about it.

Coming from many years of driving a modded Subaru WRX, it has been interesting getting used to this 7AT ('12 G37S sedan). I guess my main question is throttle technique while winding through the gears using the paddle shifters. Is there ever a moment to come off the throttle while the car is changing gears? Or just keep it mashed down and wait?

If anyone knows of any videos or discussions about this I would really appreciate it. There is a new track opening up very soon here in New Orleans, it would be great to figure some of this stuff out before a track day.

I have learned to keep the throttle open while accelerating. First I tried releasing the gas like I had a clutch, only to remember I drive a 7MT. Lol
