throttle drops during hard turns

but either way I already knew it was the VDC and no it's never completely off. I just needed to know if it was the auto doing something stupid or not.

If you turn VDC off, it's off. You can do donuts all day long, but if you press on the gas and brakes at the same time, the ECU will just go WTF are you doing and cut power.
Even if you've dumped 15k into your suspension, your cornering speed will not improve much, especially on steady state corners like freeway onramps and 90 degree turns.

I have one turn in which I can get it to happen every time (only turn I really do this on). 45mph road and turning 90-degrees to the right. From 45 in manual mode: downshift to 3, apply brakes, initiate turn while downshifting to 2, press throttle. At that point the car hangs out of gear and thinks about it. You can put your foot to the floor and the motor won't even increase RPM's if I recollect properly.
GT-R tranny seems to handle things quite well. They need to give us a free upgrade

IMO, If you know your car then the lag is irrelevant. It took a little getting used to, but after driving this car for 10 months I hardly even notice the lag because I'm pretty much in tune with the car now. I know exactly when the gears will up/down shift. And now that the car has 15k+ miles the gear hunting is pretty much gone. And no I've never gotten a transmission tsb done on my car.

When you down shift in manual, the cars going to rev match first then look at what you're doing with the throttle. It's by design and unfortunately it's not a DSG. Paddles shift slower then DS mode, better off learning how to use the accelerator and brake to control gearing. Trust the car luke...it knows what to do.
