Um...WTF?
So on my way home from In & Out Burger I was getting on the freeway and the VDC Off light came on as well as the Traction Control Light came on and wouldn't go off. I never hit the VDC off button so no clue why that came on...any ideas why? Any ideas how to get both lights off?

Check your brake pads too, chances are you need new ones on one end or the other if your fluid is that low. As your pads wear, the pistons in your calipers will stay extended. Unless you have a leak somewhere that's what is lowering your fluid level.

Completely stock currently so that is probably not it
To everyone else, I will top off my brake fluids then and see if that helps. I had the 30K service a few months ago and I would have thought that would have been checked. I guess if, at the time, the fluid was at a normal level they wouldn't have done anything. Thanks guys, I'll keep you posted

A bit off topic, but if I were you, I'd go ahead and change both your brake and clutch fluids out at this point. You want to be particularly proactive on your clutch fluid also, as it leads to all kinds of headache in these cars if your CSC gets messed up.
Come to think of it, if you're only at 30K miles and your clutch fluid reservoir is low, it's possible something is going on already. Unless you have literally fried your clutch down to the metal already, there is really no reason for your reservoir to be low. It's not like your brake reservoir, where you'll see significant fluctuations in reservoir level as the pads wear.
If you just meant that is was a tiny bit low, like within the normal variance that different people may have interpreted it being "full" or not, then you're probably fine. Do keep an eye on it to see if it continues to move though.

Brake fluid is really affected by moisture and a complete brake fluid flush is a good idea around 30k, or sooner depending on driving conditions.

The brake fluid was low but not REAL low...just enough that under hard acceleration the lights would come on. It really wasnt as low as I thought. The clutch was me just being pro-active...it was very little that I put in. That was me just being me. The 30K service wasn't too terribly long ago so I am not 100% sure why it was tripping the light. I am gonna ask the mechanic to look at that stuff when I get my oil changed.
