The reset actually isn't needed, however defaults may be closer after modifying the intake or exhaust so it more of a best practice. Either way the car will find optimum settings within the limits of it's tables and constantly monitors to keep them. In the case of the OP, there's no reason to reset the ECU at all.
Those people are insane. Driving like that will definitely get them killed.

After you learn the programming and understand the sensors it's monitoring it's really fun to drive it, reminds me of riding a horse since like a horse the car has some basic intelligence. I don't even use manual mode or shift, just use the throttle and brakes to control gearing and focus totally on the road.

It's even faster then that.. Try this... acelerate agressively through the first 3 (4 maybe for 7AT) gears in DS mode and watch it shfit at readline but then when you get up near 5K RPM in 3rd back off to hold 5K RPM and you'll notice the car hold high RPM for about 4 seconds and then it will shift to higher gears when it realizes you've backed off and are cruising. This assumes straight level road, if you going up hill with a higher load or in a corner it may even hold high RPM longer.
