Coolant temp gauge dropped to cold

Coolant temperature gauge dropped to cold while i was spiritedly driving. Ive replaced the thermostat twice. Once because i broke the thermostat in accident. Im thinking its the coolant temperature sensor because makes no since how a thermostat i just got 2 weeks ago would work for that long then fail. Anyone have any ideas why it would drop to cold and try to go back to the middle but cant. If this didnt cause the car to run rich i wouldn't care. But any help would be appreciated

Got a way to check temp through obd? I’d also say coolant temp sensor, feel like obd would confirm that
