How much boost could I run, reliably, on this kit with stock internals and stock 7AT? With exhaust, oil and tranny cooler and Ecutek tuned for supporting mods to start would be my goal.

Any and all Automatics we would HIGHLY recommend an upgraded built transmission with upgraded clutch plates. Personally I have seen forced induction builds on the VQ stock transmission hold around 4-430whp without issues short term(with the transmission cooler), but most of those setups typically lack a desirable torque curve.
Without a boost controller and open waste gate (around 6psi), this kit will already produce that power range with considerably higher torque.

7-8 PSI, You want to be around 400-430 WHP but the WTRQ you'd want to keep in the low mid 330's.
There's not real answer to that :/ depends on the tune! but I still wouldn't go anymore than 9 maybe 10 PSI, My motor popped on a SC but I was running 12 PSI, Turbos are always hit harder because of the HUGH trq they make.
We also have to worry about the Tcase not sure what the limits are.
So if I went with a build tranny from say Level 10 how much boost would I be able to run on stock internals safely?
We have customers running 10-12psi daily running E85 with zero issues, not even a hiccup.
There are many factors to take into consideration, the two most important would be your fuel system and tune. Your tune & boost controller will control your TQ curves as to when it really comes on hard. A proper fuel setup(upgraded injectors, pump & fuel return system) will prevent the car from leaning out.
Tony has Top Speed Motorsports contacted you at all about my build? I find it silly that my car is just sitting at their shop and you guys are pumping out kits left and right and TSM doesnt have it yet. So much for being the 1st G after George's build
