Bringing in my g37s 5at for a transmission and power steering flush to the dealership next week. Should i purchase mobil 1 synthetic transmission oil? or just let the dealership do their thing?

Pretty sure you can't provide your own fluids. You have to use oem stuff

Why not ? Some of the dealers let You use Your own fluids. You just have to paid labor fee.

atf change

My dealer did a drain and fill at 35k miles on my 09 7at, for 95$, they will want to use their atf Nissan matic.
No flush needed if you start the drain and fill at low enough mileage, and not expensive either.

He does let me bring Mobil 1 for oil changes, charges 32$ for filer and labor

Infiniti G's are very picky about what transmission oil they use. If you even look at the manual, it says to only use Matic J/Matic S transmission fluid. Any other fluid will void the warranty for your transmission.

Mobil 1 will probably not cut it unless it specifically states that it is Matic S/J compatible. Even then, I wouldn't take the risk. There are people on here with transmission problems due to the wrong transmission fluid being used.
