I have an '07 G35S 5AT...

here's the deal with shifting:

(1) If you start in normal D mode and then shift using the paddles, the car will enter manual mode temporarily, returning to normal D mode several seconds after you last use a paddle.
(2) If you you push the shifter **** to the left, the car will enter DS (drive sport) mode, with more aggressive automatic shifting.
(3) If, while in DS mode, you either use the paddles or shift by pushing the shifter forward or backward, the car will enter manual mode. In manual mode, you control "all" upshifts and downshifts using either the paddles or the shifter. The car will not let you seriously lug the engine, stall, or blow past redline.
(4) You can return from manual mode to normal D mode by pushing the shifter to the right.

Here is another question: Is it better to paddle shift with your foot off the gas pedal or should it not matter? I usually keep my foot on the gas?

Yeah all this stuff is in the manual. It's explained pretty thoroughly.

Leave your foot on the gas. It's not a manual transmission.
