Data Logging Questions

Looking back at this thread, now that I'm at the beginning of my remote tune.
I think every tuner will ask for different things. The tuner I went with was Eugene Turkov at Enthusiast Auto Care out of California. His approach is a bit more holistic. In addition to WOT throttle pulls from low-RPM until you hit the limiter, he's looking for as much sampling data that you're willing to provide. Cold starts, normal driving, idle, aggressive driving, and WOT pulls. Basically, the whole gamut. He runs the data logs through custom software for analysis, accompanying review of the log results manually.
So to answer my original question here with some hindsight now that I'm starting the remote tune... there is no one answer. Just follow your tuner's requests.
Oh, and data logging is only a PITA if you have a wired cable to a laptop. If you have EcuTek's bluetooth dongle you can datalog to your phone, easy peasy. In my case, I bought a flat-cable OBD adapter so the EcuTek cable doesn't knock into my knees while driving, but it's still kind of an ordeal. I'm getting used to it, I guess.
Anyway, getting through my tune answered these questions. Just log for whatever conditions your tuner wants.
