Does anybody know why Infiniti decided to put 245s in the rear and 225s in the front from the factory, and didn't even offer a 275/245 combo to begin with?

I'd say stick with stock sizes.

Do not stick with stock sizes. I went with 275/35/19 in the back and besides the noticeable difference in appearance, the car seemed to stick the road better as well. I have just put 275/30/20 on my car since I am having Lexani LSS-8 20" rims put on and taking my OEM 19" off.

If you get a tire that is too wide, such as a 275, you are actually modifying where your scrub patch is compared to your stock tire, and you are going to be putting more pressure on the inside of the tire, in turn, also modifying the way your suspension absorbs bumps. So like I said, does anyone actually know why Nissan decided to go with these tire sizes on this vehicle? It's because they calculated the amount of friction that is required to the keep the vehicle most stable in all conditions. So while you may like putting big wheels and wide tires on your car (aside from adding weight, in some cases you actually can have less tire contact with the road and more lateral tire flex), don't misinform other people and tell them it's better, unless you have a factual basis for saying that. Saying that your car "seemed to stick to the road better as well" could be just a side effect of having more rotating mass at each corner and does not count as a fact.

If I were you, OP, I'd go out and read some books by SAE on suspension and tire working. Most of those books have convenient formulas in the rear that will help you understand why every single piece of your car's suspension is affected when you change only one thing. Then again, what do I know, I'm just some guy on the internet with no experience in designing race and street car suspensions or tuning.
