I did stainless lines on my WRX some years back, and it the pedal was indeed solid when I was done. I have a feeling I’ll eventually give in and get a set for the G37.
The EBCs dusted like crazy bedding in, but the Yellows have a top layer to the friction material that helps prep the rotor surface by essentially sanding it as it quickly wears off. I just gave the wheels a thorough cleaning two days ago, and will be able to get a feel for how they are in the coming weeks.
The coating sure seems to do its job though, because the rotor surface lost the uneven dark rings that were forming from the previous pads. So far, they’re definitely worth the higher price.

The EBC Yellows have been doing great and I’m sometimes hard on brakes. They dust like a **** still, and if you have wheels with a complex design or a lot of crannies, look at something else.
Cleaning my simple 5-spoke Enkeis is definitely enough for me on a street car.

I’ll just quote myself so I don’t have to reexplain.

It's brake job time. I've decided against using the Yellow Stuff pads again as long as my G37 gets driven daily, and will be replacing them with the ceramic compound Red Stuff. The yellows annihilated a fresh set of rotors by the time they were worn down, past the point that they can be turned, so this brake job will now cost double what I anticipated. They also dusted so much, and got the wheels dirty so quickly that after cleaning, they would look nice for a few days, and then dirty AF in a week.
So in conclusion, run the Yellow Stuff if you want to stop on a dime from speed, but in the long run they'll be a lot more work and will cost more including rotors.
